Irish soda breads can be made into either sweet or savory versions. I often lean towards whatever ingredients I have on hand. If you choose not to add fixings, soda breads tend to be bland and boring.

HOW TO MAKE CHEESE AND HERB IRISH SODA BREAD
Ingredients needed:
All Purpose Flour
Baking Soda
Baking Powder
Salt
Egg
Buttermilk OR add 1 Tablespoon fresh lemon juice to a cup of milk
Sharp Cheddar Cheese
Italian Herbs
Directions:
If you don't have buttermilk (as I often don't), add 1 tablespoon fresh lemon juice to a cup of milk. Whisk together and let sit for 5-10 minutes while you gather up the rest of your ingredients.
Combine flour, baking powder, baking soda and salt in a medium sized bowl. Whisk together.
Add an egg to your milk and stir with a fork until egg is distributed.
Make a well in the center of your dry ingredients and pour in milk mixture.
The key to this quick bread is not overworking the dough. Only stir until flour is just incorporated. Transfer to a flour dusted surface and quickly work into a loaf. I use a dough scraper to lift up the sides to the center and work my way around the dough.
Transfer to a parchment lined cookie sheet, cut an X on the top of the loaf, and place in the oven.
Bake for 20 minutes, then cover with foil and return to oven for an additional 8-10 minutes.
