A quick pickle recipe often comes in handy when you're needing to spruce up a meal or simply have a delicious snack with the abundance of spring and summer produce. You can pickle just about anything you'd like with just 10 minutes and a few ingredients.
I find myself mostly pickling cucumbers and adding them to:
Sloppy Joes
With anything BBQ
Hamburgers & Cheeseburgers
Gourmet Hot Dogs
Salads
HOW TO MAKE PICKLED CUCUMBERS
Ingredients:
Water
Vinegar
Sugar
Salt
Something to pickle - Carrots, okra, cucumbers, asparagus, Jalapeños, onions, etc
Fresh dill
Whole Garlic cloves
Peppercorns
Chili Flakes
Directions:
In a small saucepan, bring water, vinegar, sugar and salt to a boil. Remove from heat and let cool for 10-15 minutes.
Slice up vegetables or item you'd like to pickle. Stuff it all into a pint sized jar.
Add in the peppercorns, garlic, dill and chili flakes (optional).
Pour the brine into the jar until liquid has covered the vegetables.
Cover with a lid and place in the refrigerator for 24 hours.
Enjoy! Pickled items will last for a week or two in the fridge.
BONUS - once you've devoured the first batch, you can simply reuse the brine and place another batch back into the jar. It will be a milder pickle outcome, but a simple shortcut to try.
